Claim by Brännland Cider is a wonderful dessert wine that works well with light desserts with elements of sweet and acidic. Tuile filled with Mascarpone cream served with arctic bramble berries.

Brännland Iscider as a sweet wine is amazing paired with cheeses and desserts but also stands well on it’s own, as a meditational wine. The Italian author, critic and wine-thinker Luigi Veronelli coined the expression ”Vino Da Meditazione” to describe sweet wines. So, pour a generous helping of Brännland Iscider in a glass that will do justice to the aromas and personality of the cider. Pair with a comfortable armchair, an open fire and a sleeping dog.

Like many classic dessert wines Brännland Iscider pairs well with foie gras. Here we’d like to recommend our barrel aged ice cider, the Barrique. It’s heavier toffee and butter scotch notes meets the fattiness of foie gras in an exceptional way. Serve the foie gras as is or get yourself some small brioche buns, soften some dried apricots in honey and make foie gras sliders.

The most obvious pairing for a dessert-wine is of course dessert. Brännland Iscider enjoys the company of any dessert with based on apples, rhubarb and berries. The acidity and sweetness of the fruit meets the same span of taste and aromas in the ice cider. Our barrel aged ice cider also plays well with chocolate desserts.

Brännland Iscider is a great companion to most cheeses. From a nutty aged Comtés across a mild Västerbottens-cheese to blue cheese. Add almonds or hazelnuts to the serving and a sweet bridge to tie the sweetness and acidity of the ice cider to the cheese. Fresh and dried fruits, marmalade or honey. Our favourite ice cider and cheese serving has it’s origins in our local deli DUÅ in our hometown of Umeå. Comtés served with roasted hazelnuts drizzled with honey and topped off with finely grated truffles.

Pairings / Savoury Food

Pernilla Perle is an obvious choice as an aperitif or as part of a summer cooler but it also works in a wide variety of food pairings. It’s demi-sec bright apple character and light sparkle makes it ideal with heavy traditional European cooking like choucroute garnie, schnitzel, roast pork knuckle and heavy sausages. On the other hand the light characteristics of the Perle makes it more than well suited to Asian food with a spicy kick or with sushi and sashimi.
